Properties: Trisodium citrate dihydrate is the tribasic salt of citric acid. Produced by complete neutralization of high purity sodium-sourced citric acid followed by crystallization. Found as white, granular crystals or white crystalline powder. Odorless substance with pleasant salty taste. Freely soluble in water and practically insoluble in ethanol, efflorescing in moist air. Trisodium citrate dihydrate is a non-toxic, low reactivity neutral salt. Chemically stable when stored normally under ambient conditions. Completely biodegradable and can be disposed of with regular waste and sewage according to local regulations.

Most Important Functions: Trisodium citrate dihydrate is widely used in foods, beverages and various technical applications, mainly as a buffering agent, sequestering and emulsifying agent, acidity regulator and in pharmaceuticals for preparing serum and injectable solutions. It also has anhydrous form, which finds more interesting application areas due to its properties.

Food and Beverages: pH control, acidity regulator with citric acid, complexes trace metal ions, complexes calcium ions in cheese, modifies or enhances taste, gives flexibility to cheese slices, gives uniform melting properties, slows down gelation action in pectin gels, stabilizes whipped cream, helps flavor development in cheese, provides color stabilization in meat, prevents phosphate buildup formation on meat surface.
