Applications: An acid with high solubility. Used as acidity regulator. Preferred due to its characteristic aroma. Has a strong tart taste. Found naturally in fruits. Used as neutralization or pH regulator in wine production. This substance, mainly used in grape-flavored beverages, is also used as an acidity regulator in grape-flavored tart jams, marmalades and confectionery. A mixture of tartaric acid and citric acid is used in hard candies to give sour apple, cherry and other tart flavors. When used together with antioxidants, tartaric acid has a synergistic effect and is used as a stabilizer in ground spices and as a chelating agent in foods containing animal or vegetable fat. When tartaric acid is used together with antioxidants in cheeses, it is used synergistically to prevent color loss and bitterness.
