Properties: Soluble in water, acetic acid, methanol and ethanol. Insoluble in other known organic solvents. White colored sweet hygroscopic 6-carbon crystalline sugar. Fluid solution of polyols with 70% total dry matter. Found naturally in stone-free fruits and vegetables or obtained by high pressure catalytic hydrogenation of glucose sugar derived from corn starch, from catalytic hydrogenation of a starch hydrolysate. Melts at 93-98oC depending on formation.
Applications: Used as sweetening agent, food additive, in toothpaste, tobacco, toilet materials and cosmetics. Also used for Vitamin C fermentation. A product very close to sugar. Has half the sweetness of sugar. When used in chewing gum, can prevent tooth decay as bacteria in the mouth cannot metabolize sorbitol. Some diabetics prefer to consume sorbitol-sweetened foods. This is because sorbitol is absorbed slowly into the body and prevents rapid rise in blood sugar. A natural sweetener and thickener used in products such as dietetic beverages and foods, flour products, confectionery, shredded coconut, chewing gum. Its property of retaining moisture in the body is also quite important. In pharmaceutical sector, has various uses as a diuretic. In industry, used in production of polyethers and surfactants for polyurethanes.
