Properties: Derived from maleic acid. Soluble in alcohol, slightly soluble in water and ether, very slightly soluble in chloroform.

Applications: Used in the production of paper sizing resins, unsaturated polyester resins, alkyd resins, plasticizers, lubricating oils, and as a styrene-butadiene rubber carboxylation agent. Used as an acidulant. Fumaric acid has bacteriostatic and antiseptic properties. Also used as acidity regulator and thermal oxidative resistance aid. Can produce expanded and superior bubbles. Due to its low solubility in water, fumaric acid with limited use is used in powder foods due to its low moisture absorption rate. Fumaric acid can be used with other acidity regulators in foods without causing bad taste. When sodium benzoate is used as a preservative in fruit juices, gelatin desserts, refrigerated biscuit systems, wines, green foods, and fish, it is added as an acidity regulator. Fumaric acid increases the stability of citrus juices. Fumaric acid can be used as an intermediate for pharmaceuticals and as an optical bleaching agent. Used in the pharmaceutical industry to produce alexipharmic sodium dimercaptosuccinate and iron fumarate.
